Trying to use POST IMAGE to populate background image from post thumbnail, and it is not working. It is a post I am trying to use the slider in. The template in use is ENFOLD and the I have the latest available template.... not sure what is up.

You can set the post image for the slide background by pressing the "use post image" button under the image picker. This alone might not display the desired image immediately, so you need to make sure to target the right post. To do that, click on the "SHOW MORE OPTIONS" button, then the "Configure post options" button. On that screen you can search for specific categories, tags and others to filter posts and find the right one.
Also, please make sure to set the desired image as the featured image of the post. Images used inside the post content cannot be extracted.

Q: Once the post is associated with the slider, if a newer post comes along or is added, will it break the "1st, 2nd... " erc?
Yes, the whole point of the dynamic content feature is to update sliders on the fly whenever a new post comes along. For example, you could select a category like technology to display the latest articles from that topic. Of course, if the new post doesn't match your filters, the slider will remain the same.
If you want to target a specific post and avoid updating it, you can either manually insert the appropriate image from the WP Media Library, or you can also assign a unique tag or category to that post and set your filters accordingly. In the slide/layer linking fields you also have an option to choose a specific post if your want to link a button or the slide and it won't change if you use that feature.
