Have imported Discount Popup and styled it as I want. When loading on mobile the image does render correctly, it only shows a portion of the image. Is there a setting I can use to make sure I see the whole image as I do on laptop.

As I can see you've added the background image of the slider as global background in the Slider Settings. The global background is not scaling in responsive mode. I'd recommend to add it a slide background instead and set the Position to center center and the Size to cover or stretch.
